
Ingredients:
1 16-oz package gnocchi (found in dried pasta section of supermarket)
1 tablespoon olive oil, 1 teaspoon olive oil
1 large shallot, thinly sliced
4 cloves garlic, minced
½ cup vegetable broth
6 cups Arugula
1 14.5 oz. can diced tomatoes with Italian herbs
1 15 oz. can white beans, rinsed and drained
¼ pepper
½ cup part-skim shredded mozzarella
¼ cup shaved parmesan cheese
Directions:
Preheat broiler to high.
Heat 1 tablespoon olive oil in large sauté pan and cook gnocchi until browned about 8 to 10 minutes. Transfer to bowl.
Add 1 teaspoon olive oil and sauté onion over medium-high heat for 2 minutes. Add garlic and sauté for 1 minute. Add vegetable broth, cover and cook for 3 minutes. Add tomatoes and cook for 5 minutes, add beans, arugula, gnocchi and pepper and mix well.
Spray an oven-proof bake dish with cooking spray, add the gnocchi and top with parmesan and mozzarella cheese and broil until golden, starting with 2 minutes intervals.
